1) Knows parts of bovine animals and analyzes preservation methods.
2) Knows the parts of poultry and analyzes the preservation methods.
3) Knows and applies veal and lamb processing techniques.
4) Knows and applies poultry processing techniques.
5) Decide on the cooking methods that should be applied to veal, lamb and poultry.
